Oscar Worthy Cocktails




    Hollywood Martini

    3 oz. Vodka
    1/2 oz. Raspberry liqueur
    Dash of pineapple juice

    Pour the ingredients into a cocktail shaker filled with ice. Shake well. Strain into a chilled martini glass. Garnish with lime.


    The Envelope Please


    1 1/2 oz. Vodka
    1/2 oz. Grand Marnier
    Apple Juice
    Fresh Lime Juice
    Dash Cranberry Juice
    Garnish with Apple Wedge

    Pour the ingredients into a cocktail shaker filled with ice. Shake well. Strain into a chilled cocktail glass and garnish with an apple wedge.


    The Red Carpet

    1 1/2 oz. Silver Tequila
    1/2 oz. Grand Marnier
    fresh raspberry juice
    dash cranberry juice
    fresh lime juice
    coloured sugar

    Wet the rim of a cocktail glass using an orange or lime wedge. Rim the edge with coloured sugar. Pour the liquid ingredients into a cocktail shaker filled with ice. Shake well. Strain into the prepared cocktail glass. Garnish with the orange wedge.

Cold Day Cuisine

  • Honey-Bourbon Pulled Chicken

    1 cup ketchup
    1/4 onion, minced
    1/4 cup bourbon
    1 tbsp. honey
    1 tbsp. apple cider vinegar
    1 tbsp. molasses
    1 tsp. tomato paste
    1 tsp. Worcestershire sauce
    2 garlic cloves, minced
    1/4 tsp. ground ginger
    1 pinch cayenne pepper
    2 boneless, skinless chicken breasts

    Combine all ingredients except chicken in your slow cooker. Mix well. Add chicken breasts, turning so they are coated with the sauce. Cover and cook on low for 8 hours. When complete, use the back of a wooden spoon to gently shred the chicken and stir. Set slow cooker to warm and let chicken stand for 15 minutes to soak up the sauce. Serve on toasted rolls.

  • Rum Coffee Risotto

    1 tbsp. instant coffee powder
    1/2 orange, zest and juice
    1/2 cup arborio rice
    2 cups milk
    2 drops vanilla extract
    1/2 cup sugar
    2 tbsp. butter
    3/4 cup double cream
    3 tbsp. rum

    Put the coffee and orange juice in a saucepan with 1/2 cup of water and bring to a boil. Remove from heat, and add the rice and leave to soak for 5 minutes. Return the pan to the heat and add the milk and vanilla extract. Cook over low heat until rice is tender, but still slightly firm to the bite. Remove from heat, add sugar, orange zest, butter, cream, and rum; stir through gently.

  • Squash Bread Pudding with Rum Sauce

    10 tbsp. unsalted butter, 3/4 cup raisins, 4 cups milk, 1 1/2 cups sugar, 2 tbsp. Grand Marnier or Cointreau, 2 tsp. vanilla extract, 2 tsp. ground cinnamon, 4 eggs, lightly beaten, 4 cups cubed butternut squash, 6 cups cubed stale white bread, 1 1/2 cups packed brown sugar, 8 tbsp. unsalted butter, 1/2 cup heavy cream, 1/4 cup rum, Whipped cream, for serving. Heat oven to 350°. Place the raisins in a small bowl and cover with boiling water; let sit for 10 minutes. Whisk together melted butter, milk, sugar, Grand Marnier, vanilla, cinnamon, salt, and eggs in a large bowl until smooth. Drain the raisins and stir into the custard mixture along with the squash and bread and let sit for 10 minutes. Pour mixture into a greased baking dish and cover with aluminum foil. Bake for 50 minutes, uncover, and continue baking until bread pudding is golden brown, about 1 more hour. To make the sauce: Heat brown sugar, butter, heavy cream and rum over medium-high heat and cook until sugar dissolves and sauce thickens slightly, about 5 minutes; set aside and keep warm. To serve, spoon bread pudding into serving bowls, drizzle with sauce, and top with a dollop of whipped cream.

    The Ole’ Irish Buck

    1.5 oz. Irish Whiskey
    1/4 oz. lime juice
    2 oz. ginger ale
    Lime wheel for garnish

    Pour whiskey and lime juice into an ice-filled Collins glass. Top with the ginger ale and garnish with a lime wheel.

  • St. Paddy’s Day Punch

    2 cans frozen limeade concentrate
    2 cups Gatorade, Lemon-Lime flavor
    1 cup light rum
    2 (355 ml) cans 7-Up or Sprite

    Mix limeade, Gatorade and rum in a punch bowl and chill. Just before serving, add 7-Up, and garnish with lemon slices.




    When Irish Eyes Are Smiling

    1 oz. Irish Whiskey
    1/4 oz. green creme de menthe
    2 oz. Cream

    In a shaker filled with ice, add all ingredients and shake vigorously. Garnish with a sprig of fresh mint.
